BEING A VEGGIE IS NEVER BORING

What are your favorite types of foods?

I’ve always loved my vegetables, so when I found myself eating less and less meat over the years because of the way it is farmed and adulterated in the UK (hormones and water added etc), it was only a small step to let my humane feelings become paramount and search for great recipes to support being an almost complete vegetarian.  I say almost complete as sometimes my craving for fish, particularly shellfish is so overwhelming, I know it’s my body telling me I need the extra zinc, iron and other minerals once in a very infrequent while.

I love exploring new ways of adapting a traditional meat recipe to make it tasty enough to share with non vegetarians.  At presently on holiday in Texas my wonderful hosts are used to living with vegetarian options at mealtimes, so the ingredients are not hard to come by.  Back in the UK it’s even easier as of course I know what is where and where to purchase.  Using herbs and spices, a variety of vegetables in season and my imagination means I create food that is tasty and I am proud to serve to friends and family. Vegetables and dairy are for me my staple diet for the remaining time left to me.

Confession, bacon still smells so tempting though even if I don’t give in!
